Hulk Pancakes

RECIPE

Age | 8+ months

Servings | about 10 pancakes


INGREDIENTS

1 cup cooked quinoa

1/2 spinach

1 egg

1/2 ripe banana

1 tbsp soaked chia seeds

1 tbsp ghee or coconut oil for frying

Pinch cinnamon


PREPARATION

1. Add the quinoa, spinach, egg, banana, and cinnamon to a food processor and blend until well combined

2. Stir soaked chia seeds into the mixture

3. Preheat a frying pan over medium heat and add the ghee or coconut oil. Spoon the mixture into the frying pan (about 1 tbsp per pancake). Fry on both sides until golden brown.


The pancakes are on the softer side, if you want to have them more firm - add another egg.
